You can indeed do that.
On the Properties panel, in the table widget where one chooses the arrays to plot, try clicking on the "Legend Name" column for the selected item, it enters "edit" mode where you can change the Legend Name. |

ah, now I see it. I'm happy, but have the following comment:
For what it's worth, I never would have found how to do this on my own since it's fairly non-standard. What's there basically amounts to *slow* double click to edit. because single click *doesn't* let you edit the legend text value unless the row is already selected. If you double click too fast then color chooser opens. Right click does nothing even when the row is selected. Would be more intuitive if the first click (when the row isn't selected) or even right click let you edit. Or I can get used to the current behavior ;-)

I am accepting Utkarsh's answer below.
Turns out that once the line is highlighted, a single click allows a user to edit this field. I believe this is standard most places in ParaView. Thus, closing.
