[Paraview] How to export eps in Paraview?

You cannot. The closest thing you can do is to save the image at a
very high resolution and use that. Usually, this is acceptable for 3D
rendering. If you want to save 2D plots as vector, I suggest exporting
the data and plotting it in something that support vector based output
such as gnuplot.
